The time I was working at the library, I also had to study for my bachelor's degree, attend classes at the university and had almost daily rehearsals for our concerts with my band. Clearly the last thing I wanted to do was cooking! Who want's to go to a store full of people, after such a day, spending two hours at a place, to buy a bag that should have taken twenty minutes to get? Obviously nobody! It had to be somethhing quick! Something easy!  This is how the three ingredient (Tortellini, Mozzarella & Beans) recipe was made for the very first time.  

So, if this situation fits you, and you had a long day at work, picked up your kids on your way home and forgot there was nothing in the fridge to eat, this easy cheesy tortellini recipe will be perfect for you! 



1 clove garlic

3 tbsp. extra virgin olive oil

Salt and black pepper, to taste

Spinach ricotta tortellini

Mozzarella balls

3 cups green beans


1. Bring a pot of salted water to a boiling point. Cook the tortellini in the boiling water according to package directions. (2-4 min.)

2. In a frying pan toss the oil around. Put the pealed garlic in the hot oil. Now add salt and pepper to the taste, I also put in ¼ tbs of coriander and 1 tbs of parsley. Add the green beans, cook and stir them with the garlic until everything is tender and fragrant.

3. In a large bowl, toss together the roasted green beans, tortellini and mozzarella. Season to taste with salt and black pepper.

4. Serve topped with a tbs of greek yogurt
