What does a Classic Lemon Butter Cake, self-Love and self-acceptance have in common?
Unfortunately, most of us know the feeling of waking up in the morning, looking in the mirror and not really liking what they see. Maybe it's the height, the weight, hair loss or imperfect skin. My closet is the reflection of my life-long struggle with my weight. That pair of jeans in the closet I might fit in again one day, or that beautiful dress I'd love to wear again one summer. Well, I can tell you that the path of self-love and self-acceptance is probably the hardest and longest challenge you may attend in your life. it seems almost impossible to not let a look or a comment from someone else determine how you feel about yourself, or at least ruin your day. Understanding, that this person probably wasn't judging you, but you were rather judging yourself is very hard to accept. The moment I realized, that how you truly feel, is so much more important than how you look, was the first step in liking myself again.
So, why make, and eat this Classic Lemon Butter Cake, when all you really want to is to fit in your old jeans? Well, first of all, I stopped letting a number on my pants size define me as a person. Don't you agree, that we are just more than a number? I then started to invest time in myself, learning new things, discovering new areas of interests, like cooking.
I started reading more books, rather than investing time in things, that don't really matter. I only eat food, that I truly enjoy. Of course, I haven't forgotten to stay healthy at the same time, but I don't let this thought obsess me, taking away the 'living' part out of my life! Also, I'm feeding my passions and talents, rather than watching bad television or wasting my time countlessly scrolling my screen up and down.
And for heaven's sake, let's eat that piece of cake we desire!
This is one cake I am going to do over and over again!

Oven temperature 350 F
2/3 cup butter
Grated zest of 1/2 lemon
1 1/4 cups all-purpose flour
1 tbs baking powder
3/4 cup powdered sugar
Juice of 1 lemon
2 tbs water
HOW IT'S MADE
1. Melt the butter and let it cool.
2. Beat the eggs, sugar, salt and lemon zest until light yellow and very thick. Stir in the butter and fold in the dry ingredients. Pour into the silicon pan.
3. Bake on a low oven rack for around 45 minutes.
4. Let it cool for around 5 minutes before removing it from the pan onto a serving platter.
5. Combine the ingredients for the glaze. Stick holes in the cake with a skewer. Pour the glaze in the holes. Serve the cake chilled.
